I can't seem to find applesauce made with the skins on the internet and since many of the nutrients are in the skins, I want to know if they will be just as potent after the apples are cooked.

no they wouldn't be as they get burned to charcoal as they cook.

Reply:The apple skin is a protection from the elements and is removed,usually, so the apple can and will cook quicker.
Reply:All foods lose nutrients when cooked, including meats, but it wouldnt be real wise to eat raw meat. If the product is steamed or boiled, you'll likely lose most of the nutrientin the water.
